Ingredients:
- 1 teaspoon Azada Olive Oil & Orange
- 2 small carrots, grated
- 14 medjool dates, roughly chopped
- 23 grams desiccated coconut
- 150 walnuts/almonds, roughly chopped
- 125 grams pecans, roughly chopped
- The zest of 1 orange
- 1 teaspoon cinnamon powder
- 1 teaspoon ground ginger
- 70 grams desiccated coconut, for rolling

Preparation:
Blend the Azada’s Olive Oil & Orange, carrots and dates in a food processor until it forms a paste. Add the remaining ingredients (except for the 70 grams of desiccated coconut, for rolling) – and whiz until you have a smooth texture. Put the 70 grams of desiccated coconut in a shallow dish. Take tablespoons of the mixture and roll into balls, then lightly roll in the coconut and store in a greaseproof paper lined container. Set in the refrigerator for two hours before serving.
Chef’s Tip
The recipe is super versatile, if you don’t want to try Azada’s Olive Oil and Orange, you can change it for the Azada’s Olive Oil and Lemon and the lemon zest.
